Alessandro Pavoni is responsible for the launch of many successful restaurants in Sydney, including Ormeggio at The Spit, Chiosco by Ormeggio, Postino Osteria, a'Mare, Cibaria Manly & 55 North.

 

This experience is complemented by his background working in hotels, from his time as Executive Chef at the Park Hyatt Sydney and Hyatt globally, and his current experiences working under management agreements and partnerships with hotel brands such as Crown and Accor.

Alessandro has been engaged as a consultant for multiple restaurants in Australia and internationally, providing a suite of advice in the following areas;

  • Menu design

  • Menu engineering

  • Financial control

  • Team leadership 

  • Venue and kitchen design 

  • Food Safety and Compliance

Project Managing new venues from concept to design to liaising with all builders and tradespeople, operational setup, and opening logistics.

Alessandro Pavoni is not only the complete package, a true Restaurateur, but is also supported by an extensive team of talented individuals who are masters of their craft across many areas. The combined ability of Alessandro and his team to navigate challenges and bring concepts into reality is unique and wide-ranging.

Anna Pavoni is the co-owner of Maestro Hospitality’s portfolio of restaurants, driving the back of house operations from the centralised support office for all its businesses. This includes everything from Accounts to PR, Marketing, HR, Reservations, Events, Legal, and more. 

 

Anna has her own consulting business and is available for consultancy services, alongside Alessandro Pavoni.
