Who We Are

Maestro Hospitality was born under the creative direction of Alessandro Pavoni, the conductor of a collective of masters in their field who bring exceptionality to the Sydney Dining Scene. 

Together, we are masters in the art of Italian cuisine. Our food is rooted in tradition, delivered with a strong sense of local place and a contemporary approach. 
 

We believe that delivering genuine hospitality service is equally as important as our food. Our passionate team of staff are welcoming, professional, and dedicated to ensuring consistent quality, impeccable attention to detail, and personalised service. 
 

Without the equilibrium between food and service, we cannot be masters. The benchmark for our success and prestige is to be memorable across all aspects of the experience for those who dine with us. We strive and we succeed.
 

Maestro Hospitality is an ecosystem of maestros who work together in unison to create unique and iconic experiences. Above all, we are a family.  We consider our guests to be family, too.

Alessandro Pavoni

Brescian-born and Michelin-trained chef Alessandro Pavoni established himself as a pioneer in Sydney's dining scene in 2009 with his first restaurant venture, waterside fine-dining Italian restaurant, Ormeggio at the Spit.
 
After five years of coveted success, Alessandro launched a casual seaside Italian trattoria, Chiosco by Ormeggio in 2014 alongside Bill Drakopoulos and Ormeggio Head Chef Victor Moya.
 
​In December 2020, Alessandro opened in the striking Crown Sydney complex at Barangaroo, an ambitious and glamorous traditional Italian fine-dining restaurant and bar, a’Mare, heralding the art of tableside service.

2024 brought two new venues for Alessandro: classic neighbourhood osteria Postino Osteria, located in Summer Hill, the inner west of Sydney; as well as Cibaria and 55 North in Manly, offering a variety of Italian dining experiences in one beachside location.
 
Restaurateur, consultant, and champion of identifying and developing young talent, Alessandro Pavoni is renowned as an industry-leading master in both cooking and first-class hospitality. Maestro Hospitality is a collective of masters working together to create unique and iconic experiences.
